Ingredients

For the Tart:

  • 1 sheet frozen or fresh pizza dough or homemade vegan dough
  • 4 medium ripe tomatoes sliced
  • 4 tbsp vegan pesto
  • 10 cubes vegan cheese optional, use any kind you love
  • 0.5 tsp salt
  • 0.5 tsp black pepper

For Brushing:

  • 1 tbsp soy milk or other plant milk

Instructions

Step 1: Prep the Oven

  • Preheat your oven to 200°C (390°F).

Step 2: Shape the Dough

  • Cut the dough into a round shape slightly larger than your tart pan (28cm). Press it into the pan and shape the edges into a crust.

Step 3: Add the Base Layer

  • Spread the pesto evenly over the base of the dough.

Step 4: Layer the Tomatoes

  • Slice the tomatoes into circles and arrange them over the pesto. Sprinkle with vegan cheese cubes if using. Season with salt and black pepper.

Step 5: Brush the Crust

  • Use soy milk to lightly brush the edges of the crust.

Step 6: Bake

  • Bake at 200°C for 20 minutes. Then reduce to 170°C (340°F) and bake for another 25 minutes until golden and crispy.
