Vegan Onion-Tomato Quiche – Creamy & Easy Egg-Free Brunch

Ingredients

For the Crust (or use store-bought):

  • 1 1/2 cups flour 200g
  • 1/2 cup vegan butter margarine, or oil (90g)
  • 1/2 tsp salt

For the Filling:

  • 2 small onions chopped
  • 3 garlic cloves minced
  • 1/2 medium tomato chopped
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 600 g firm natural tofu
  • 3/4 cup + 1 tbsp soy cream
  • 1/4 cup nutritional yeast
  • 1/2 tsp salt

For Decoration:

  • 10 cherry tomatoes halved

Instructions

Step 1: Make the Crust

  • Preheat oven to 185°C (365°F). Combine all crust ingredients and mix until a dough forms. Press into a 20cm greased tart pan, forming edges with your fingers.

Step 2: Pre-Bake the Crust

  • Pre-bake for 12 minutes. Remove and set aside.

Step 3: Prepare the Filling

  • In a pan over medium heat, sauté onion and garlic for 5 minutes. Add tomato, sugar, salt, and pepper; cook for 10 minutes. Set aside.

Step 4: Blend the Tofu Mix

  • In a food processor, blend tofu, soy cream, nutritional yeast, and salt until smooth. Add the sautéed veggies and pulse until combined.

Step 5: Assemble and Bake

  • Pour the filling into the pre-baked crust and smooth out. Decorate with halved cherry tomatoes. Bake for 45 minutes.
