Ingredients

For the Custard:

  • 1 can full-fat coconut milk 400 ml or thick soy cream
  • 1/4 cup soy cream
  • 1/4 cup liquid sweetener maple syrup, agave, etc.
  • 1/4 cup tapioca starch or cornstarch 30 g
  • 1/2 tsp agar agar powder
  • 1/4 tsp vanilla bean paste or vanilla extract

For the Caramelized Crust:

  • 4 tsp white or brown sugar about 1 tsp per serving

Instructions

Step 1: Combine Ingredients

  • In a saucepan, whisk together all custard ingredients until fully smooth and combined.

Step 2: Cook the Custard

  • Place over medium-low heat and stir frequently for 10–15 minutes. Don’t let it boil. The mixture should thicken into a pudding-like consistency.

Step 3: Fill and Chill

  • Pour the custard into ramekins. Let cool to room temperature, then refrigerate until set (about 1–2 hours if needed).

Step 4: Caramelize the Top

  • Before serving, sprinkle each ramekin with 1 tsp of sugar. Use a kitchen torch to caramelize the sugar or place under an oven broiler for 4–5 minutes until golden.
