1flax egg1 tbsp ground flaxseed + 3 tbsp water, set aside 5 min

1/4cupcane or coconut sugar

Instructions
Step 1: Prepare the Yeast
In a bowl, mix warm water with 1 tbsp flour and 1/4 cup sugar. Add yeast and stir. Let sit for 10 minutes until bubbly and foamy.
Step 2: Mix the Dough
In a large bowl, combine flour, salt, and sugar. Add the yeast mixture, flax egg, and oil (if using). Mix everything together until a soft dough forms.
Step 3: Knead Briefly
Transfer to a floured surface and knead the dough for about 5 minutes until smooth and elastic. Add flour if the dough is too sticky.
Step 4: Shape the Buns
Divide into 8 equal pieces and shape each into a ball. Flatten slightly and place on a parchment-lined baking tray.
Step 5: Preheat & Bake
Preheat oven to 200°C (425°F). Optionally brush buns with soy milk or oil. Bake for 12–15 minutes until golden brown and puffed.
