Ingredients

  • 2 cups 250g all-purpose flour + 1 tbsp
  • 2 cups 480ml unsweetened soy milk
  • ½ cup 100g sugar (or sweetener of choice) + 1 tbsp
  • 4 tbsp 80g vegetable oil
  • 1 packet 7g active dry yeast
  • 1 tsp pure vanilla extract
  • 10 drops orange essence optional but recommended
  • 10 drops almond essence optional but recommended
  • 1 pinch salt

Instructions

Step 1: Activate the Yeast

  • Warm 1 cup of soy milk (not hot) and pour into a medium bowl. Add 1 tbsp flour, 1 tbsp sugar, and the dry yeast. Mix well and set aside for 10 minutes until bubbly.

Step 2: Prep the Waffle Iron

  • Grease your waffle iron with a drop of oil and preheat it according to its instructions.

Step 3: Mix the Dry Ingredients

  • In a large bowl, combine the remaining flour, sugar, and salt.

Step 4: Combine Wet & Dry

  • Pour the rest of the soy milk, vegetable oil, vanilla extract, and essences into the dry ingredients. Add the yeast mixture. Whisk until smooth.

Step 5: Let the Batter Rest

  • Allow the batter to rest for at least 5–10 minutes (or overnight in the fridge for deeper flavor).

Step 6: Cook the Waffles

  • Pour batter into your waffle iron and cook until golden brown and crisp.
