Ingredients

  • 1 tbsp vegetable oil
  • 1 medium onion chopped
  • 2 sweet red peppers sliced
  • 1 tsp salt
  • 1 garlic clove mashed
  • 4 cm fresh ginger or 1 tsp dried ginger
  • 1 red chili pepper chopped and deseeded
  • ½ tbsp garam masala spice (recipe linked below)
  • ½ tbsp curry spice
  • 1 tbsp tomato purée
  • 1 tsp sugar
  • 100 ml water
  • 415 g can of beans any type, drained and rinsed
  • Juice of ½ lemon

Instructions

Step 1: Sauté the Base

  • Heat vegetable oil in a skillet over medium heat. Add chopped onion and red pepper. Sprinkle with salt and sauté for 5 minutes, until softened.

Step 2: Add Aromatics

  • Add garlic, ginger, chili, garam masala, and curry powder. Sauté for 2–3 minutes to bloom the spices.

Step 3: Build the Sauce

  • Stir in tomato purée, beans, sugar, and water. Mix well and let simmer for about 5 minutes.

Step 4: Finish with Citrus

  • Remove from heat and stir in fresh lemon juice. Adjust seasoning to taste.

Serve warm with rice, naan, or flatbread.
