Ingredients

For the Dough:

  • 1 sheet of puff pastry or use homemade dough
  • 2 tbsp oil
  • 6 tbsp sugar

For the Cream Filling:

  • 2 cups soy milk or other plant milk
  • 1/4 cup sugar
  • 4 tbsp tapioca starch or cornstarch
  • 1 tsp vanilla extract or paste
  • 2 tbsp fresh lemon juice

Instructions

Step 1: Preheat & Prep

  • Preheat oven to 200°C. Cut puff pastry in half. Place each half on a baking sheet with parchment paper and roll out thinly.

Step 2: Oil & Sugar Topping

  • Brush each sheet with 1 tbsp oil and sprinkle 3 tbsp sugar per sheet evenly.

Step 3: Bake the Dough

  • Bake both pastry sheets for 10–12 minutes or until golden. Let cool.

Step 4: Make the Cream

  • In a medium pan, mix milk, sugar, starch, and vanilla. Bring to boil while whisking. Once thickened like pudding, turn off heat and stir in lemon juice. Beat briefly if lumpy.

Step 5: Assemble

  • Place one sheet of baked pastry in a pan. Spread the warm cream over it. Top with the second sheet. Press lightly.

Step 6: Chill & Slice

  • Refrigerate for 15–30 minutes to set. Slice into 8–12 bars. Enjoy!
