Ingredients

  • 700 g yellow onions about 5–6 medium
  • ½ pack puff pastry store-bought, vegan
  • 25 g margarine or vegan butter or oil/coconut oil
  • 1 tbsp rosemary fresh or dried
  • 1 tbsp fresh parsley or dried
  • 1 tbsp garlic minced or powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 30 g shredded vegan cheese optional but recommended

Instructions

Step 1: Prep the Onions

  • Peel and cut the onions in half lengthwise.

Step 2: Sauté the Base

  • Heat a 28cm frying pan over medium heat. Add margarine, then stir in rosemary, parsley, garlic, salt, and pepper until evenly combined.

Step 3: Cook the Onions

  • Place the onion halves cut-side down in the pan. Cover with a lid and let them cook for about 15 minutes until lightly golden.

Step 4: Preheat the Oven

  • While onions cook, preheat your oven to 180°C (350°F).

Step 5: Add Vegan Cheese (Optional)

  • Remove the lid and sprinkle the onions with shredded vegan cheese.

Step 6: Prepare the Puff Pastry

  • Cut the puff pastry into a 28cm round to fit your pan. Place it over the onions and press gently around the edges to seal.

Step 7: Bake

  • Transfer the pan to the oven and bake for 20 minutes, or until the pastry is golden brown and puffed.

Step 8: Flip and Serve

  • Remove the tart from the oven. Place a plate over the pan and carefully flip the tart out so the onions face up.
