Ingredients

  • 5 carrots peeled, bun-sized
  • 1/4 cup soy sauce
  • 1 tbsp apple cider vinegar
  • 1/4 cup vegetable broth
  • 2 tbsp maple syrup or honey
  • 1 tbsp BBQ sauce
  • 1 tsp yellow mustard
  • 1 tsp fresh garlic minced
  • 1/2 tsp chili flakes or powder
  • 1/2 tsp onion powder

For Serving:

  • 5 hot dog buns – homemade in links
  • Mustard fried onions, vegan mayo, or toppings of choice

Instructions

Step 1: Prep the Carrots

  • Peel and trim the carrots to fit the size of your hot dog buns.

Step 2: Boil

  • Bring a pot of water to a boil. Boil carrots until just fork-tender, about 10–15 minutes. Drain and rinse with cold water.

Step 3: Marinate

  • Place carrots in a ziplock bag or container. In a bowl, whisk all marinade ingredients and pour over the carrots. Let marinate in the fridge for at least 3 hours (best: 4–6 hours).

Step 4: Grill

  • Preheat a grill pan or outdoor grill. Grill the marinated carrots for a few minutes on each side until charred and heated through.

Step 5: Serve

  • Place grilled carrots in buns and top with your favorite condiments. We love them with mustard, fried onions, and a drizzle of vegan mayo!
