Fluffy Flaxseed Crepes – Bulgarian-Style Katmi

These fluffy flaxseed crepes (Katmi) are a wholesome Bulgarian breakfast made with yeast, flax flour, and plant milk. Fluffy, vegan, and so easy!

Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup flaxseed flour
  • 1 packet 7g active dry yeast
  • 1 tbsp sugar or other sweetener
  • 1 pinch salt
  • 2 cups warm soy milk or any plant milk, not hot
  • 2 tbsp vegetable oil or melted coconut oil
  • 1 dash vanilla essence optional

Instructions

Step 1: Mix the Dry Ingredients

  • In a large bowl, stir together the all-purpose flour, flaxseed flour, yeast, sugar, and salt.

Step 2: Add the Wet Ingredients

  • Pour in the warm plant milk, oil, and vanilla (if using). Whisk until well combined and smooth. Let the mixture rest for 5–10 minutes to activate the yeast.

Step 3: Preheat Your Pan

  • Heat a non-stick or lightly greased pan over medium heat.

Step 4: Cook the Crepes

  • Scoop about one ladle of batter onto the hot pan. Spread gently into a round shape. Cook for around 2 minutes per side or until golden and bubbly.

Step 5: Serve

  • Serve warm with your favorite toppings. We love them with fresh fruit, chocolate spread, peanut butter, or vegan yogurt.
