For the Filling:
- 400 g smoked tofu crumbled
- 2 red onions finely chopped
- 2 large mushrooms chopped
- 1/2 jalapeño finely diced
- 2 cloves garlic minced
- 2 tbsp fresh parsley chopped
- 1 tsp hot curry spice
- 1 tsp salt
- 1 tsp black pepper
For the Sauce:
- 200 ml tomato purée
- 1 tbsp oil
- 1 tsp sugar
- 0.5 tsp salt
- 0.5 tsp dried basil
- 0.5 tsp black pepper
For Assembly:
- 1 pack of vegan pizza dough ready-made or homemade
Step 1: Prepare the Filling
Preheat a pan with 1 tsp oil over medium heat. Add chopped onion and jalapeño. Cook for 2 minutes. Add garlic and mushrooms, stir and cook for another 8 minutes. Season with salt, pepper, and curry spice. Remove from heat and stir in chopped parsley.

In a small pan, add tomato purée, oil, sugar, salt, basil, and black pepper. Heat over low heat, stirring until sugar is dissolved. Set aside.
