Ingredients

For the Filling:

  • 400 g smoked tofu crumbled
  • 2 red onions finely chopped
  • 2 large mushrooms chopped
  • 1/2 jalapeño finely diced
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tsp hot curry spice
  • 1 tsp salt
  • 1 tsp black pepper

For the Sauce:

  • 200 ml tomato purée
  • 1 tbsp oil
  • 1 tsp sugar
  • 0.5 tsp salt
  • 0.5 tsp dried basil
  • 0.5 tsp black pepper

For Assembly:

  • 1 pack of vegan pizza dough ready-made or homemade

Instructions

Step 1: Prepare the Filling

  • Preheat a pan with 1 tsp oil over medium heat. Add chopped onion and jalapeño. Cook for 2 minutes. Add garlic and mushrooms, stir and cook for another 8 minutes. Season with salt, pepper, and curry spice. Remove from heat and stir in chopped parsley.

Step 2: Make the Sauce

  • In a small pan, add tomato purée, oil, sugar, salt, basil, and black pepper. Heat over low heat, stirring until sugar is dissolved. Set aside.

Step 3: Preheat the Oven

  • Preheat your oven to 180°C (355°F).

Step 4: Shape the Baskets

  • Roll out pizza dough and cut circles with a wide glass or biscuit cutter. Grease a muffin tin and gently press dough circles inside to form basket shapes.

Step 5: Fill and Bake

  • Brush each dough cup with tomato sauce. Fill with 1–2 tbsp of the tofu mixture. Bake for 20 minutes or until golden.
