Ingredients

For the burger base:

  • 4 big white mushrooms or portobellos
  • 4 vegan burger buns homemade in useful links below

For the marinade:

  • 1/4 cup soy sauce
  • 1/2 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tbsp fresh garlic minced

For topping:

  • Fresh tomato slices
  • Cucumber slices
  • Mustard ketchup, or vegan mayo (your choice)

Instructions

Step 1: Prep the Mushrooms

  • Clean mushrooms with a damp towel and gently remove the stems (save them for later soups or stir-fries).

Step 2: Marinate

  • Whisk together all marinade ingredients. Place mushrooms gill-side up in a shallow dish or ziplock bag and pour marinade over the tops. Let sit for 15 minutes, flipping halfway through.

Step 3: Grill or Sear

  • Heat a grill pan or skillet to medium-high. Grill mushrooms for about 5 minutes on each side, until nicely browned and tender.

Step 4: Assemble Your Burger

  • Toast your burger buns if desired. Layer grilled mushrooms with your favorite toppings like tomato, cucumber, mustard, and vegan mayo. Serve warm.
