Ingredients

  • cups 300g all-purpose flour + 1 tbsp
  • 4 tbsp sugar
  • 1 pinch salt
  • cup 150 ml warm water
  • 7 g dry yeast 1 packet
  • cup 65 ml oil or 120g vegan margarine (for croissant-like texture)
  • 12 tsp jam of your choice e.g. blackberry, raspberry, apricot

For brushing:

  • 2 tbsp soy milk or other plant milk

Instructions

Step 1: Activate the Yeast

  • In a small bowl, mix the warm water, yeast, 1 tbsp flour, and 1 tbsp sugar. Let it rest for 5–10 minutes until foamy.

Step 2: Prepare the Dough

  • In a large bowl, mix the flour, remaining sugar, and salt. Add in the yeast mixture and oil (or soft margarine). Stir and knead until a smooth dough forms.

Step 3: Divide and Roll

  • Place dough on a floured surface and cut into 6 equal pieces. Roll each into a thin oval sheet, roll it up like a cinnamon roll, then slice lengthwise. Coil each strip into a rose shape.

Step 4: Rise and Preheat

  • Place the shaped cruffins into a greased muffin tin. Cover and let rise in a warm place for 20 minutes. Meanwhile, preheat your oven to 180°C.

Step 5: Bake

  • Brush the tops with soy milk and bake for 25 minutes, or until golden and a toothpick comes out clean.

Step 6: Fill with Jam

  • Let cruffins cool slightly, then use a teaspoon to make a shallow hole in the center of each (don’t pierce the bottom). Fill each with 1 tsp of jam.

Step 7: Serve

  • Dust with powdered sugar and serve warm or at room temperature.
