Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 3 tbsp sugar or any sweetener of choice
  • 1 pinch of salt
  • 1 ½ cups soy milk or any other plant milk
  • cup vegetable oil or melted coconut oil
  • 1 dash vanilla essence optional

For the ombre colors:

  • For blue-purple: spirulina powder + blueberries or just frozen blueberries
  • For red-ish: beetroot powder + strawberries/cherries or just sour cherries
  • For pink: frozen raspberries and cherries

Important tip: Add coloring gradually. Avoid using more than 20g of fruit per bowl to maintain pancake texture

Instructions

Step 1: Prep the Batter

  • In a large bowl, mix the flour, baking powder, sugar, and salt. Stir to combine.

Step 2: Add Wet Ingredients

  • Pour in the soy milk, vegetable oil, and vanilla extract. Mix until just combined—don’t overmix.

Step 3: Divide & Color

  • Divide the batter evenly into 3 bowls. For each bowl, add your selected fruits or natural coloring and blend well. Adjust quantity gradually until you get the shade you want.

Step 4: Preheat Your Pan

  • Place a non-stick skillet over medium heat and allow it to warm up.

Step 5: Cook the Pancakes

  • Scoop about 2 tablespoons of batter per pancake into the pan. Cook for 1–2 minutes on each side until bubbles form and edges look set. Flip and cook another minute.

Step 6: Stack & Serve

  • Layer your pancakes by color to create the ombre effect. Serve warm with your favorite toppings.
