Ingredients

  • 1 ¾ cups 220g all-purpose flour
  • 2 tsp baking powder
  • 1 tsp cinnamon optional
  • 1 pinch of salt
  • 3 tbsp sugar or any other sweetener
  • 2 large ripe bananas
  • 2 tbsp vegetable oil or nut butter like almond or peanut
  • ½ cup 122ml soy milk
  • 1 tsp vanilla extract optional
  • cup flax egg see below
  • cup chopped walnuts optional
  • cup chopped chocolate optional

To make a flax egg: Mix 1 tbsp ground flaxseed with 3 tbsp water. Let it sit for 5 minutes until thickened.

Instructions

Step 1: Preheat

  • Preheat your oven to 180°C (350°F).

Step 2: Prep Dry Ingredients

  • In a large bowl, sift together the flour and baking powder. Stir in sugar, salt, and cinnamon.

Step 3: Mash the Bananas

  • In a separate bowl, mash the bananas with a fork. Mix in soy milk, oil, flax egg, and vanilla.

Step 4: Combine

  • Pour the wet ingredients into the dry mix. Stir gently until just combined. Fold in walnuts and chocolate if using.

Step 5: Bake

  • Grease a loaf pan if needed, pour in the batter, and smooth the top. Bake for 40–50 minutes, or until a toothpick comes out mostly clean.

Tip: If edges brown too quickly but the center isn’t done, cover with foil and continue baking.
