Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 3 tbsp sugar or other sweetener
  • 1 dash salt
  • 1 1/2 cups soy milk or any plant milk
  • 1/3 cup vegetable oil or melted coconut oil
  • 1 ripe banana mashed
  • 1/3 cup chocolate chips or chopped dark chocolate
  • 1 dash vanilla essence optional

Instructions

Step 1: Mix the Dry Ingredients

  • In a large bowl, whisk together the flour, baking powder, sugar, salt, and chocolate chips.

Step 2: Add the Wet Ingredients

  • In a separate bowl or jug, mix the mashed banana, soy milk, oil, and vanilla (if using). Add to the dry ingredients and stir just until combined. Don’t overmix.

Step 3: Cook the Pancakes

  • Preheat a non-stick pan over medium heat. Use 2 tablespoons of batter for each pancake. Cook for 2 minutes on each side, until golden and fluffy.

Step 4: Serve
