For caramel:
1 cup dates (soaked in hot water for 30 min.)
3 tbsp peanut butter
1/2 tsp salt
2 tbsp soy milk (or other plant milk)
For nougat:
1/2 cup gluten-free oats (blended into flour)
1/4 cup almond flour
2 tbsp peanut butter
2 tbsp date caramel
For the third layer and covering:
1/3 cup salted peanuts
1/2 cup chocolate (melted)
Method:
Step 1: In a food processor add soaked dates, peanut butter, salt, and soy milk. Blend until smooth.
Step 2: In a medium bowl mix together the blended oats with almond flour, peanut butter, and 2 tablespoons of the date caramel you've made. Mix together until you can form a ball from the dough.
Step 3: In a bread silicone form add a sheet of baking paper (optional but will make it easier), press the nougat dough with your fingers evenly.
Step 4: With a spatula spread evenly date caramel on top of the nougat. Sprinkle with peanuts and press slightly with fingers.
Step 5: Place in the freezer for at least 30 minutes.
Step 6: Remove from the silicone form cut into around 8 snickers and cover in melted chocolate.
