Onion is one of the most used ingredients in our kitchens. But sadly it's rarely found as the main hero of our menus, but why? It has so many different structures and flavors almost like my favorite potatoes. So this recipe is my huge honor to this sometimes misunderstood ingredient. Try it once, and trust me you will want it more and more because it's so yummy and so easy to make.
You can even play a bit with my recipe you can add different types of onion (shallot works amazing but quite expensive), I decided to use the most common and the cheapest onion type - yellow onion as everyone can afford it and no need for any additional research for some let's say "rare" type. As well as you can use more different spices and add as an example dried tomatoes it will boost the flavor, even more, be creative use your imagination, I will just provide you with a proper base with this recipe! ;)

Ingredients:
0,7kg onions
1/2 pack puff pastry
25 gr. margarine or vegan butter (or substitute with oil or flavorless coconut butter)
1 tbsp. Rosemary (fresh or dry)
1 tbsp. fresh parsley
1 tbsp. garlic (fresh or dry)
1 tsp salt
1 tsp black pepper
30 gr. shredded vegan cheese (optional but good)
Method:
Step 1: Peel and cut your onions in halves (shown in the photo).
Step 2: Put on medium heat 28cm frying pan.
Step 3: Place margarine, then add rosemary, parsley, garlic, salt, and black pepper.
Step 4: Mix them all together to cover the whole pan.
Step 5: Place onions in the cutting side down. Cover it with a lid and let the onions cook for around 15 minutes or until they are slightly golden brown in color.
Step 6: Preheat oven to 180C.
Step 7: Remove the lid and sprinkle onions with shredded cheese.
Step 8: Cut your pastry in a rounded 28 cm diameter shape.
Step 9: Cover onions with a blanket of pastry push with a spatula on the sides so the pastry stick properly and form the edges of your tart.
Step 10: Place the whole pan with a tart in the oven and let it cook for 20 minutes or until golden brown.
Step 11: Remove from the oven. Place a plate that can cover 28 cm pan on top and gently flip it upside down.
